Week 7: Discontinued-The Grilled Cheesy from Crux Brewery reimagined as an Appetizer 

With Super Bowl being this weekend, I tried to find a recipe I could use to bring to a party. I also have hopelessly missed the grilled cheese sandwich that they used to serve at Crux Brewery in Bend. My husband and I would go out of our way to stop there for it whenever we were near Bend (it also doesn't hurt that their beer is great). They stopped serving it and I was devastated.

I found a picture of the old menu on yelp so I could see the description of ingredients. Then I looked for recipe for a how to do a cheese crusted grilled cheese. Then, because I wanted to make life simpler, I looked for recipes for mini grilled cheeses so I could double up on my challenge recipe and what I was bringing for the Super Bowl party.

These mini sandwiches have Swiss, provolone, goat cheese and bacon on the inside (I skipped the pickles bc I'm not a fan 😬). Then the bread is Asiago cheese crusted. They were pretty easy to assemble. I chopped up some crunchy bacon, diced some slices of provolone and Swiss and mixed that with goat cheese at room temp. I sliced a skinny French baguette in thin slices and buttered them before dredging them in shredded Asiago cheese. I then pan fried them until browned.

This were surprisingly easy and delicious, very reminiscent of Crux's . They were also a hit at the Super Bowl party. I would love to mess around with the ingredients for another app. Definitely will make these again!
