Week 3: Kashmiri- Instant Pot Dum Aloo

I'm going to preface this by saying I made this recipe in the midst of the snow/ice storm over the weekend. I had to put in, cancel, reschedule my grocery pick up order multiple times to try and get it ahead of the start of the storm and the mass panic buying. There were a lot of substitutions I had to make because of this so I don't think I got close enough to the actual recipe to give this a true review. I'll have to try the exact recipe again one day.

The substitutions I had to make were:

  • butter for ghee
  • regular chili powder for Kashmiri (halved)
  • tomato paste and water for the pureed tomatoes 
  • omitted fenugreek leaves

I don't have a ton of experience cooking Indian food outside an amazing instant pot butter chicken recipe, so when I saw a Kashmiri instant pot recipe I figured I had to try it.

I tried to prep out as much of the ingredients ahead of time to try to keep the process simple because of course my kids had requested spaghetti instead 🤦🏽‍♀️ so I just as cooking two meals at once. I ran into a few issues with this.

 

 

The recipe called for peeling and coring the potatoes and stated you could skip the coring part to save time. The coring part was not hard, but sheesh was the peeling part. I have never peeled petit potatoes before and never will again. So small, so slippery and multiple near peeling of my fingers. I also ran into issues with my soaked cashews turning into a smooth paste. Mine was more of a frothy milk with cashew sand. I decided to just roll with it, rather than trying to remake it. I had already had to have a friend pick us up milk for my son after I forgot it in the many grocery pick up reorders and I didn't want to waste anymore. 

I had read ahead in the comments that many people got the burn notice on their instant pots while cooking. It is so annoying when that happens, so I followed the direction to add an additional 1/4 cup of water. I still got the burn notice so ended up more water. I also had to run the cycle for 3 more minutes twice because the potatoes did not cook thoroughly. 

In the end, it tasted pretty good. I think I was conservative with seasoning because of my unfamiliarity with Indian food, but I wish I would have given it more spice.

Rating: 5/10 (probably very much due to my substitions)
