Week 28: Maple Bacon Scones (breakfast), Roasted Strawberry, Dark Chocolate and Brie Grilled Cheese (lunch) and Blueberry Pork Chops with Cinnamon Sweet Potatoes (dinner)

So....I got a little ambitious on this one. I figured everyone else on the Reddit 52 weeks of cooking page would have beautiful desserts and artistic cooking is just not in my skill set. So I decided to interpret the theme of Just Desserts as you eat only desserts for breakfast, lunch and dinner. It came down to the wire picking recipes because I kept getting side tracked by interesting recipes that didn't exactly fit my interpretation of the theme (like a Thai inspired pbj, not really a dessert but sounded really intriguing). 

 

Breakfast-Bacon Maple Scones: I've made scones a couple of times for the cooking challenge so I felt comfortable with another scone recipe. I never order them while out, but ugh they taste incredible fresh out of the oven! I figured I'd try a more savory route since the rest of the day would be mostly sweet, plus who turns down something with bacon! This was a super simple recipe that I think I would make again for sure! I'd double the maple glaze and douse them in it though!

Lunch-Roasted Strawberry, Dark Chocolate and Brie Grilled Cheese: This was a pretty quick and easy recipe (minus the roasting of the strawberries), and I think I would make this again but maybe switch up the bread. I used brioche bread but maybe something less sweet would be better because this was incredibly rich. I also probably melted the cheese and chocolate a little more than I probably should have. This was also super messy but yummy!

Dinner-Blueberry Pork Chops with Cinnamon Sweet Potatoes: This recipe was pretty straight forward, and dang why have I not been broiling my pork chops instead of baking! Blueberry sauce with the adobo sauce was delicious! I would do the sweet potatoes differently next time as the texture just didn't taste quite right (even after adding additional butter, maybe more half and half or use heavy cream instead).
