Week 5: Celestial - Easy No Bake Strawberry Shortcake Moon Cakes

We used to read the story Lady in the Moon (about Chinese New Year) every year from the reading street text when I taught first grade and it always had me curious about moon cakes. I'll admit that when I looked up moon cake recipes and saw how many ingredients I probably wouldn't easily be able to find (and with report cards being due this week), I chose a cheat no bake recipe.  I fully understand that this is not an authentic moon cake, but rather a sort of cake pop made with a moon cake mold, so please don't come for me! Plus the bonus that I can make it with my daughter. 

This recipe was ridiculously easy! It would have been even easier had my past his nap time one year old not decided that he wanted to "help". After the screaming fight over who got to hit the food processor pulse button ended with tears and the one year old going down for a nap, it was smooth sailing. My four year old kept wanting to eat the dried strawberry powder, so she kept getting sent to rewash her hands. The mold was an easy, fun tool and I loved the designs (found here). We popped them in the fridge to see if the powder would set a little bit.

They tasted pretty good and were super easy to make. This would be a fun recipe to experiment with and a fun kid activity.
