Week 44: Dous Makos

I usually make all my challenge recipes the Sunday of the week of the challenge. This week's challenge, I woke up feeling not so fresh after a friend's birthday party, only to find out I was out of sugar. So I told myself I would catch up sometime during the week. Then on Tuesday, I got injured at work and spent the rest of the week laid up. Today was the first day hobbling around without crutches so I tried to jump on making this. It just so happened that I had planned to make a dessert for this week's challenge and the next week's challenge, and it's Halloween week so we are on sugar overload right now.
This recipe seemed simple enough, but definitely didn't follow the part of cranking the heat up high as I knew it would definitely boil over into a sticky mess. I tried to stay close by to stir as often as possible, and I'm glad I did because the few times I tried to sit down to rest my leg, it got real close to bubbling over. The recipe said to boil until it looked like lava and temped at 115° Celsius. I don't have a candy thermometer so I just used the one that came with a deep fryer and hoped it was accurate.
After boiling, I realized I only had neon food coloring 😬, so it was a really bright pink! I must not have boiled it long enough because my mixture wasn't solid enough to make layers of the colors. I decided to swirl it to make it look a little cooler. I checked it after about 4 hours in the fridge and it still wasn't quite hardened enough to slice, so I decided to let it sit in the fridge overnight.
Sadly, after 24 hours in the fridge, these never fully set. Also, when I went to cut it and tasted a little of it, it tasted way too much like black licorice (that 1/4 tsp of anise went waaaay further than I thought) and was just not for me at all.
