Week 42: Instant Pot Beef Barbacoa

This was a busy weekend with birthday parties, a huge Duck game, still catching up on chores from being out of town weeks ago and, to top it all off, a two year old with one of the snottiest noses(I should just say snotty face as even his cheeks are covered) I've ever seen. So I was really happy with the theme under pressure because it meant that I can throw something in the instapot and hopefully have leftovers for the work week!

I love barbacoa but the few recipes I have tried out just don't match what I get from restaurants (Por Que No's barbacoa tacos are my go to!). This recipe had a 4.96 rating from 136 votes so I figured it was worth a try! I also decided to make some quick pickled red onions to go with the tacos.

Well....thinking this would be a simple prep recipe was wrong. I came down with a terrible migraine halfway through cooking. Just to add to my frustration, I got the dreaded burn notice on my instapot, so I had to release the pressure and remove all the meat and scrape the bottom (despite specifically deglazing after searing and making sure there was nothing stuck to the bottom). Then I had to add it all back in and start pressurizing again. Then I had to go lay in bed with an ice pack and ibuprofen (and two kids laying on me because why not) and wait for the instapot to finish and hopefully not give a burn notice again.

Then came time to shred, reduce the sauce and crisp up the meat under the broiler. Luckily my meds had started to kick in so it was not a terrible experience. Also, the meat and sauce was tasting pretty amazing. I got a little impatient waiting for the sauce to thicken so there was a decent amount left (bc it was thinner) after pouring some on the meat before broiling. I let leftover reduce a bit more and kept it because it kind of reminded me of birria and I thought maybe dipping tacos could be good!

As soon as my meds for my migraine and nausea kicked in, I was able to thoroughly enjoy this. I would definitely make it again, but not under the stressed/tired/sick circumstances like today. Lesson learned.
