Week 36: Baked Hot Honey Crunchy Chicken

I am always on the lookout for crunchy chicken recipes that don't require frying and this one had great reviews! Plus I had never done a cornflake coating so I was curious to try it out.

I'll be honest, I hate dredging chicken in egg wash and any type of coating because it's messy, but this wasn't too bad. All the reviews mentioned that it called for way too much cornflake crumbs but I ran out after my first half and had to fill in with panko, so I have no idea what they were talking about. Well...maybe because I double dredged and used Costco chicken breast (they're huge so I cut them in half). I also had to do a second batch of the egg wash. As of writing this, I only have tried the cornflake coating and not the panko so we'll see how that turned out later. I also seasoned my chicken breasts before dredging as another reviewer commented.

The hot honey sauce was super easy to make, but spicy! I played it a bit conservative on the spice too and I like spicy so real curious what it would taste like if I did the higher end amount. 

I served this with diced sweet potatoes and white cheddar pasta and was not disappointed! It was really crispy and yummy! I think it'd be great as a sandwich as well! I will definitely make again.
