Week 33: Garlic Butter Creamed Corn Chicken

With school starting back up again soon and a new position I need to learn about, I'm starting to do some of the challenge recipes a heads of time. This week's challenge was corn, which I love and use a lot but wanted to try something new. This recipe was a for sure winner!

I prepped out all of my items ahead of time, which took awhile. Once commented on the recipe said it took her 2 hours to make with all the prep (contrary to the hour stated) which lined up about with how long it took me. Maybe if I prepped while cooking (like I normally do) it wouldn't have taken so long, but my kids meltdowns can be unpredictable so I was trying to give myself some wiggle room with cooking.

I also get a bit apprehensive pan frying chicken. I feel like mine always get overcooked on the outside and under on the inside and my sauce gets overdone. I also use Costco chicken breast, which are huge, so I was being extra careful. They turned out great though, so maybe I finally have the temperatures figured out on my stove!

The rest of the recipes was pretty straightforward and easy. I served it with white rice, but might try brown or quinoa next time. This dish was not super pretty to look at, but was so delicious! The extra crunch of the bacon (which you know I through in a couple extra slices than what was called for) was a good contrast with the creaminess of the sauce and the chicken and rice. I will 100% make this again!
