Week 29: Chicken Biscuit Eggs Benedict with Chipotle Hollandaise Sauce

 

 

I had originally planned on making crab cakes with a  remoulade. Then I was going to just buy crab cakes from New Seasons and make the remoulade. Then I completely lost all motivation while prepping for a vacation and decided to instead clean out the fridge and make some sort of Benedict. I then ran into multiple expired items and had to switch up plans multiple times. I settled on trying to use up eggs, chipotle in adobo sauce, chicken burgers (the Costco carmelized onion with white cheddar ones), and biscuits. Oh, and I'll have to substitute lime for the lemon on the hollandaise. Between all my expired food and losing motivation, I really need to get back on a schedule/routine this summer 🤦🏽‍♀️.

This was a really easy meal to throw together. Oh and of course I needed to use the new egg rings that I bought on prime day, so I saved myself having to poach eggs. I also drizzled some cilantro lime creama on top for good measure. I would make this again for sure, but try out some additional tweaks based on whatever I had in the fridge.
