Week 32: Tortilla de Patatas

I will fully admit that I had no idea what Andalusian meant until this challenge and found that Andalusians are that people of Andalusia, an autonomous community in southern Spain (that may be a direct quote from Wikipedia). When researching their notable dishes I saw the Spanish Omelette or the Tortilla de Patatas and thought that looked easy enough with a small amount of ingredients. I didn't notice the plate flipping portion until later eek!

Slicing the potatoes on my cheese grater reminded me that I really want to buy a mandolin. I end up leaving a chunk of potato out each time because I'm too scared of slicing my finger (it's happened more times than I'd like to count). Prep was simple enough, until I read the part about 2/12 CUPS (you read that right: CUPS) of extra virgin olive oil. You boil the potatoes and onions in the oil to begin with. Reading comprehension is important because while I did read that you need a 10inch skillet for the last part of the recipe, I neglected to see the part about the boiling hot oil being in a large skillet. So when I piled all of the potato/onions in the 2 1/2 cups of oil, it was at the brim and I was stressing. I managed to not burn myself throughout the boiling or straining process though!

The second part of mixing with the eggs and frying was relatively easy, except my oven runs hot so the outside got a bit darker than I wanted. The plate flip to turn the Omelette was not nearly as scary as I thought it would be. It cooked faster than I thought it would too.

I served this with a caesar salad (shocking for me because I'm not exactly a veggie fan), but that was the suggestion from the recipe. I'm kicking myself for not thawing one of the baguettes I made from the last challenge to go along side of this. 

This turned out really good! So simple but delicious! Will definitely be making this again! They say you can serve hot, room temp or cold. Can't wait to try it cold tomorrow!
