Week 12: Poetic- Snoop Dogg's Dirty South Gumbo

For this week I had planned to find a recipe by rapping chef on Instagram (rappingchef) because I'm just thoroughly impressed by his ability to create rap lyrics to popular songs tied to cooking. If you haven't followed him yet, you should check him out! I couldn't nail a recipe by him I was feeling for the weekend so I switched it up and broke out the Snoop Dogg cookbook From Crook to Cook and chose the Dirty South Gumbo. It ended up being a random 70 degree weekend in March, but too late to switch it up so I went with it.

Snoop's recipe serves like 8-10 people so I found an online review that cut it in half and followed their lead for the most part. I also decided to add shrimp because why not. After prepping everything out and seasoning the chicken, I decided to throw some extra creole seasoning on the chicken because it just didn't seem like enough seasoning. Hoping it doesn't over power the dish. I forgot to dry my chicken thighs with a paper towel before seasoning and they did not get a good brown on them when I seared them, so I was bummed about that. They are definitely not cooked through after the 4-5 minute sear so I tossed foil over the plate so they would stay warm while I worked on the roux.

I have never heard of a roux made from vegetable oil and kind of wish I would have subbed butter. It also wasn't thickening so I was frantically checking other reviews to see if I needed to add more flour. Through this I found out that you do different oils for different kinds of gumbo and apparently this one is more Cajun style. I ended up throwing in a half tbsp more of flour.This was a great site to check out about making roux.

After the roux, it was a breeze. I threw some shrimp in during the final 5 minutes. This turned out amazing and I will definitely be making this again! Served with Snoop's 19 Crimes Wine which is surprisingly not terrible 😂
