Week 18: Cajun Style Eggs Benedict with Peach Bellinis

I know I've already done a poached egg recipe recently, but I love them and I finally feel like I am nailing poaching without using poaching cups. Plus, the story behind the naming/creation of the Eggs Benedict just cracked me up so I had to do it. According to Wikipedia:

"In an interview recorded in the "Talk of the Town" column of The New Yorker in 1942, the year before his death,[4] Lemuel Benedict, a retired Wall Street stock broker, said that he had wandered into the Waldorf Hotel in 1894 and, hoping to find a cure for his morning hangover, ordered "buttered toast, poached eggs, crisp bacon, and a hooker of hollandaise". Oscar Tschirky, the maître d'hôtel, was so impressed with the dish that he put it on the breakfast and luncheon menus but substituted ham for the bacon and a toasted English muffin for the toast.[5] "

I can fully relate to the importance of a hangover breakfast cure and eggs benedict is one of my go tos! The eggs benedict recipe I chose did not end up being my favorite. It called for cheddar beer biscuits but I was feeling lazy and used a mix for Red Lobsters Cheddar Bay Biscuits. I've never actually been to Red Lobster but I feel like people rave about these. They were okay. Maybe the recipe would have been better if I had actually made the biscuits from scratch. The Hollandaise was not as thick and creamy as I had hoped either. 

Peach Bellinis were served at my wedding but I had never actually made them before. According the Wikipedia:

"The Bellini was invented sometime between 1934 and 1948[1][2][3] by Giuseppe Cipriani, founder of Harry's Bar in Venice, Italy. He named the drink the Bellini because its unique pink color reminded him of the toga of a saint in a painting by 15th-century Venetian artist Giovanni Bellini.[4 "

Peaches are obviously not in season currently, so I used frozen peaches. My first round were okay but my last round I loaded up with extra puree and they tasted delicious. Would definitely make again!
