Week 45: Ina Garten's Mocha Chocolate Icebox Cake

The month of October ended pretty rough, so I ended up making desserts for week 44 and 45 on the same weekend. Luckily, we have family in town and I'm planning on bringing some into work (as a thank you for coverage while I was out) so I won't be tempted to eat cake, fudge and Halloween candy for the rest of the week.

I had to modify this recipe a bit. I thought we had espresso powder and kahlua, but those must have been tossed while attempting to clean out the cabinets and alcohol shelf. This ended up working out because it would have been real mean to have a cake that the kids couldn't eat but everyone else could (if I make this again, I'll try the recipe as is). I ended up adding a little more cocoa powder and heavy cream to offset it. I also used chips ahoy cookies instead of Tates, because holy hell Tates are expensive!

This was a relatively easy to make recipe, but I ran into a problem when I opened the chips ahoy. One pack was absolutely crushed to pieces. It would have been okay if I didn't have to spread a thick whipped cream over them. It was a hot mess and I ended up having to try to piece them back together to form some semblance of a crust. There were supposed to be 5 layers like this, but honestly, I lost count. I put it in the fridge overnight (along with week 44's Dous Makos) and hoped for the best!

This dessert saved the day after the Dous Makos failure. This was really rich and good!
