Week 13: Knifework- Chopped Italian Sandwich

I had a hard time deciding what to do for this challenge, but then I remembered all the chopped sandwiches I had been seeing on Instagram and used this as my excuse to make these. I also thought these would be a great meal for watching March madness.

I had to make a few substitutions for the ingredients. I couldn't find any good hoagie/sandwich rolls, so I grabbed a ciabatta baguette from Trader Joe's. I couldn't find capocollo, so I just grabbed some extra antipasto platter items. Finally, instead of pepperoncinis and banana peppers, I went with Mama Lils peppers and cut back on the olive oil.

Once I got prepping, I threw the ingredient measurements to the wind because it seemed like there wasn't enough deli meat proportionally. I was also short on mayo, but I'm not a huge fan of mayo so I was fine with that. I mixed the mayo, oil, red wine vinegar and oregano together first before mixing with the meat, veggies and cheese.

After prepping all of the ingredients and mixing everything I threw it in the fridge to sort of marinate. The plan was to eat it for dinner, but the  parents day out turned into a dinner out, so it got saved for Sunday lunch (which meant about 24 hours of marinating).

It turned out pretty good, but I think I would mess with the recipe a little bit for next time and throw in some balsamic vinegar glaze. I like the chopped sandwich idea, but I wasn't blow away with the taste.
