Week 17: Earl Grey Scones, Victoria Sponge Cake and Ricotta and Roasted Tomato Bruschetta with Pancetta

I decided to go all out for this week and do a whole tea party. I read that typical tea parties consist of three courses. The sandwich course (I went with more of a canape routes with the bruschetta), the scone course (Earl grey Scones) and pastry course (the cake). We'll see if this turns out to be a disaster!

First off was the cake. Now, I have never been good at baking or decorating a cake, so this should be good..... I felt I was doing okay with beating the sugar and butter, but I must not have incorporated each egg enough before adding the milk, because it looked kind of grainy. But, no going back now! Holy hell, this batter was so thick and hard to spread. The cakes looked to come out okay, but the recipe set that the toothpick should come out slightly clean and mine came out fully clean so I assume they'll be on the drier side. Probably because I only had 9inch cake rounds rather than 8inch. Miraculously, they look okay, and the edges left in the pan tasted pretty good! Putting together the cake seemed a bit intimidating, but ended up pretty easy.

I made Scones for one of the past years challenges, so I felt a bit more comfortable. These Scones came out really crumbly though when forming so I was worried they were going to fall apart. Luckily they seemed to fare well! I was real surprised when making the orange glaze to find out the orange I had was a blood orange!

The bruschetta was really easy to put together, but I had to sub cubed pancetta as I couldn't find sliced.

These all turned out much easier than I thought and were pretty damn delicious. The bruschetta was really messy so I don't think I'd be serving that for any tea party. They also weren't super flavorful. I wish I would have done a balsamic glaze over the top of them. The cake and scones were amazing!
