Week 20: Spam Musabi Wrap Hack

I had a lot of different directions I was thinking of going with the wrapping idea. I first thought about bacon wrapped something or even trying the beef Wellington. But, I felt like there would be a ton of bacon wrapped items beef Wellington attempts (and someone attempted it the previous week and said it was really difficult) entries on Reddit. Then this amazing Braised Brisket Tacos with Street Corn and Jalapeno Lime Ranch popped up on my Pinterest (recipe) that I really wanted to try, but then I remembered it was Mothers Day weekend and how exhausted I am during these last weeks of school and decided to go a slightly easier route. I am really glad I did too, because this turned out pretty damn good.

My husband loves spam musabi and this popped up on my Pinterest page and I figured it was worth a shot. The recipe was pretty straight forward but I took some shortcuts. I bought sushi rice and just followed that recipe and made a larger amount so that it could go along with Trader Joes Mandarin Chicken as the main. I also didn't follow the recipes teriyaki recipe, instead dousing the spam slices in Bachan's Bbq Sauce. 

I need to mess with the ratios to ensure better wrapping next time, but I think I will definitely make batches of these during the summer for easy snacks/meals. I think the ingredients can be modified as well to change it up and keep it interesting.
