I was kind of stuck on this challenge because I'm not a huge jello type fan. This rainbow cake looked fun, although I have to point out that it is only half a rainbow.

I don't know why I keep trying to make cakes. They always look uneven and I don't have the patience to wait until they are fully cooled so the frosting always looks terrible 🤦🏽‍♀️ Well, I went for it again.

The recipe was super easy, but then my kid decided to take over an hour of fighting to go down for a nap so my patience was already out the window. In the plus side, this allowed the cakes to cool a lot longer than I normally would have.

The frosting went about as expected with my lack of artistic ability, but nothing a few thousand sprinkles couldn't try to save. The taste was actually pretty good though so this does not bode well for my summer diet. I might try this recipe again and as a glutton for punishment, I may try to get the whole rainbow in!
