Week 52: Chocolate Cola Cake with Dulce de Leche

I really wanted to finish out the year strong, but the holidays exhausted me so I did the best I could with what looks to be an amazing recipe when executed accurately. As the end of the year was looming, I really wish I would have just made a fancy carbonated beverage for the carbonation challenge, but alas here we are. I'll frame this as my last huge cheat dessert before trying to get in shape for a Hawaii trip.
The recipe was pretty straightforward to follow. I followed a previous recipe for the Dulce de leche from condensed milk in the insta pot, treated myself to some new silicone cake pans and bought a new attachment for my mixer. I did manage to spray the coke, cocoa and coffee mixture everywhere while adding to the mixture, which is especially fun since we're going on week 2 of a broken dryer 😣.
My husband doesn't like coconut and I was a little worried about having the kids trying pecans (potential allergic reaction on a weekend did not sound like my ideal Saturday night ) , so I shredded up some of our leftover hersheys chocolate bars for a topping. I must not have warmed up the dulce de leche enough because I didn't get the drippy effect like they had (I was probably a little too impatient 😬). I also only let it sit in the fridge for about 30 min because a certain child kept asking if we could have some yet....
While this was not the show stopping pretty I was hoping for, this was freaking tasty! It was fluffy and rich! I will definitely make again and make with the coconut and pecans topping!
