Week 51: Blintzes

I thought a breakfast item would be a good one to make before the last week before winter break, but this one took a lot longer than I had anticipated. I should have done the make ahead items the night prior or at least pulled the butter and cream cheese early so they could come to room temp so I could start. The recipe said about a half hour, but with waiting for things to come to room temp it took about an hour and half. Still ready by 9:30, a reasonable breakfast time, but when your kids are up by 6, that's pretty late.
The recipe was fairly simple to follow. The one part they didn't state in the steps was greasing the pan when cooking the blintz pancakes, so my first one tore and ended up in the trash. Luckily I got the hang of it with some spray and using two kinds of spatulas to flip them. I probably could have let them brown a bit longer but was trying to rush a bit.
Filling them was easy, except mine were a lot fatter and shorter than the pictures. I made the mistake of trying to multitask while frying them and ended up with some browner ones, but overall not too bad.
These tasted pretty good, but I think I should have crisped them up a bit more. My daughter loved the berry sauce. I might try again with prepping the night before to see if I can get them crispier.
