The end of the school year is kicking my ass, and we enjoyed a nice weekend at the beach with family over Memorial Day so I had to double up on weekly challenges this week to catch up. I stuck with the plans to do Cochinita Pibil for week 22. I originally planned to do either Smoked Shrimp Boil or Honey Butter Cajun Shrimp withSmoked Gouda Grits for the smoked challenge, but decided to pivot to something I could do with the Cochinita Pibil to make my life easier. I definitely want to draw both those recipes in the future though.

The cochinita pibil was super easy to prep and cook. Next time I would maybe add some extra spices, but overall was really tasty and easy!

I halved the smoked street corn recipe and thank god I did! I don't think I could have fit a full recipe in my smoker. The recipe was good, but I would definitely add jalapeños, cayenne pepper and more chili powder next time.
