Week 25: Hawaiian Loaded Nachos with Kalua Pork and Mac Salad

Once I saw the Hawaiian theme I knew I wanted to attempt to recreate the epic Hawaiian loaded nachos we got from the Timbers soccer game. It also happened to be Father's Day weekend and my mother in laws birthday so making a big batch or kalua pork and Mac salad worked out perfectly since we were hosting! I could use those two items to still make the loaded nachos without have to size down the portion.

I found an incredibly high rated recipe for kalua pork that was ridiculously easy with limited ingredients to buy. It sounded a bit crazy to throw just Hawaiian salt (I used Himalayan) and liquid smoke on the pork than throw it in the slow cooker for 16-20 hours but well the reviews raved about it, so I went for it! One of the top reviews mentioned putting a sliced banana still in the peel on top of the roast so I followed that step as well. 

The Hawaiian Mac salad was also ridiculously easy and highly rated. The carrots I got were huge so I may have overdone the shredded carrot to Mac ratio and I'm not a huge mayo fan so I got real uncomfortable as I slabbed in two and a half cups, but I tasted it before refrigerating and it tasting and it was really good. So I had high hopes for after fully cooling!

To make life easier, I swooped some Tostitos Queso Blanco and some PF Changs Dynamit Sriracha Mayo. I had Furikake Rice Seasoning from a previous challenge making Spam Musabi, but I forgot the green onions 🤦🏽‍♀️. The final product I was hoping for is this:

This came together really well! So freaking tasty! I will definitely be making all of the elements and the nachos again!
